I found a great events blog with an interesting article about "Questions to ask my...."
Full of helpful things when you just don't quite know what you should be asking your florist, photographer (nudge, nudge that could be me :-)  ) or your caterer etc...

PS: I can confidently answer all of the photographer questions and this comes only from experience and a rapport with a host of clients. Just saying...
